En route from Seven Devils we crossed hills and mountains and emptied, rather startlingly, into agricultural plain. These are either mustard or canola. Can you help us out?

Your photo looks a lot like this photo from Wikipedia of a canola field in New South Wales.
Actually, according to Wikipedia, canola is a trademark name for rapeseed (yes, r-a-p-e-s-e-e-d.)
I think that the proper scientific name for these plants is "yellow flowers".
